
Most days you know Buddy Nielsen as the frontman of Senses Fail, but what you don’t know is that he enjoys cooking awesome and special food every Sunday that he’s not on tour. Last week we debuted Mealtime With Buddy on PropertyOfZack, and it was greatly received. We’ll be doing this special series of Contributor Blogs until Buddy heads out on Senses Fail’s next tour with Stick To Your Guns, The Story So Far, and Make Do And Mend this fall. Read up on how Buddy made Beef Stir-Fry and Rice and try not to get too hungry with all the pictures!
Ingredients:
Beef Stir-Fry
- 2 tsp cornstarch
- 1/4 cup of soy sauce
- 1 cut of steak 1lb, whichever cut you’d like. I used pre-sliced pepper steak
- 1/2 red bell pepper
- 1/2 green bell pepper
- 1/2 orange bell pepper
- 1 bunch of scallions
- 1 thumb size piece of fresh ginger
- 2 cloves garlic
- 1 lime
- 2 tbsp honey
- 2 tbsp vegetable oil
- 3 cups sugar snaps or snow peas
- 1 tbsp crushed red pepper flakes
- 1 tbsp dry sherry or rice wine
Rice
Instructions:
- 2 medium cloves of garlic
- Salt to taste
- 3 tbsp of vegetable oil
- 2 cups white rice

For Rice
1. Put 2 cups of rice into rice cooker bowl and wash rise under cold water, filling up the bowl and emptying the bowl of water until the water is almost clear. This cleans the rice and gets ride of any other stuff that might have made it’s way in there.
2. Once the rice is clean add 2 cups rice 3 cups of water. Salt the water until it tastes like tears, not to salty but just enough to taste. Add the garlic and vegtable oil and turn that sucker on. Should take about 20 min. Continually stir and fluff every 5 min.
For Stir-fry
1. Stir together 1 teaspoon cornstarch and 1 teaspoon soy sauce in a medium bowl. Cut the steak into finger width strips, the stir into the cornstarch mixture. Set aside for 10-20min while you prepare the other stuff.
2. Halve and seed the peppers, and cut them into slices about 1/2 in thick. Finely chop the scallions. Finely grate the ginger and mince the garlic.
3. Make the sauce. Squeeze the lime into a bowl. Stir in remaining cornstarch and soy sauce, then add the honey.
4. Place large frying pan or wok over high heat, then add 1 tablespoon of the oil. Add the beef, let it cook for about a min, then stir. Cook for about 3-4 min, stirring from time to time, until the beef is fully browned. Transfer it to a plate and drain and wipe out the pan.
5. Add the remaining oil, then add the peppers. Cook for 1 min, then add the peas and cook for another min, stirring constantly. The vegetables will be just tender. Next, add the garlic, ginger, chili flakes, and half of the scallions. Stir-fry for a min or two longer.
6. Now add the sherry wine or rice wine, then return the chicken to the pan and pour in the soy sauce, lime and honey mixture. Bring the liquid to a boil and cook everything for 1 min or until the beef through and the sauce has thickened. Scatter the rest of the scallions on top.
7. Serve in bowls with rice or on top of rice on a plate.
